Ingredients

For the Beef Filling:

1 lb ground beef

1 tbsp olive oil

1 packet taco seasoning (or homemade blend)

½ cup onion, finely diced

2 cloves garlic, minced

½ cup tomato sauce (or salsa for extra flavor)

Salt & pepper, to taste

For the Cheesy Pocket Tacos:

8 small flour tortillas

1½ cups shredded cheese (cheddar, Monterey Jack, or a blend)

2 tbsp melted butter (for brushing)

Toppings (Optional):

Sour cream

Shredded lettuce

Diced tomatoes

Jalapeños

Green onions

Hot sauce

Instructions

Step 1: Cook the Beef Filling
In a skillet, heat olive oil over medium heat. Add onion and sauté until softened.
Add ground beef and cook until browned, breaking it up as it cooks.
Stir in garlic, taco seasoning, and tomato sauce. Simmer for 3–5 minutes until thickened.

Step 2: Assemble the Pocket Tacos
Lay tortillas flat. Spoon a few tablespoons of beef mixture onto one side of each tortilla, then top with shredded cheese.
Fold the tortilla in half, pressing edges lightly to seal.

Step 3: Cook Until Golden
Brush both sides of the folded tortillas with melted butter.
Place them on a skillet or griddle over medium heat and cook 2–3 minutes per side until golden and crispy, and cheese is melted inside.

Step 4: Serve & Load Up!
Serve warm and load with your favorite toppings — sour cream, lettuce, diced tomatoes, jalapeños, and a drizzle of hot sauce.
