1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 eggs, lightly beaten
2 tbsp unsalted butter, melted
1/4 cup milk
1 tsp garlic powder
1/2 tsp salt
Fresh thyme or chives for garnish
INSTRUCTIONS:
Preheat Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with muffin cups.
Mix Ingredients: In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, melted butter, milk, garlic powder, and salt. Mix until everything is well combined.
Spoon into Muffin Tin: Spoon the mashed potato mixture evenly into the prepared muffin tin, filling each cup almost to the top.
Bake: Bake for 25-30 minutes or until the tops are golden and slightly crispy.
Garnish & Serve: Let the muffins cool for a few minutes before removing from the tin. Garnish with fresh thyme or chives and enjoy!
