Ingredients:
1 lb ground beef
2 medium potatoes, diced
1/2 cup roasted green chiles, chopped
1 small onion, diced
2 cloves garlic, minced
2 Roma tomatoes, chopped
1 1/2 cups beef broth
1 tsp cumin
1/2 tsp oregano
1/2 tsp salt (or to taste)
1/4 tsp black pepper
1 tbsp oil

Instructions:
Heat oil in a large pan over medium heat. Add ground beef and cook until browned.
Add onions and garlic, sautΓ©ing until fragrant and softened.
Stir in tomatoes, green chiles, cumin, oregano, salt, and black pepper. Cook for 3 minutes.
Add diced potatoes and pour in beef broth. Stir to combine.
Cover and let simmer for 20-25 minutes, stirring occasionally, until potatoes are tender and broth slightly thickens.
Serve hot with warm tortillas.
