For the Casserole:
1 bag (9–10 oz) tortilla chips , lightly crushed
1 lb ground beef (or turkey/chicken for a lighter option)
1 packet taco seasoning (about 1 oz, or make your own—see below)
1 cup salsa (mild, medium, or hot, depending on your spice preference)
1 can (15 oz) refried beans
2 cups shredded Mexican blend cheese , divided
Optional Toppings:
Sour cream
Guacamole
Diced tomatoes
Sliced black olives
Chopped green onions

Step-by-Step Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C) . Lightly grease a 9×13-inch baking dish or casserole pan.
Step 2: Cook the Beef
In a skillet over medium heat, cook the ground beef until browned and no longer pink (about 6–8 minutes ). Drain any excess grease.
Stir in the taco seasoning and salsa, mixing well to combine. Simmer for 2–3 minutes , then remove from heat.
Step 3: Layer the Casserole
Spread half of the crushed tortilla chips evenly across the bottom of the prepared baking dish.
Spoon the refried beans over the chips, spreading them into an even layer.
Add half of the cooked beef mixture on top of the beans, followed by 1 cup of shredded cheese .
Repeat the layers: remaining chips, beef mixture, and another 1 cup of shredded cheese .
Step 4: Bake
Bake for 20–25 minutes , or until the cheese is melted, bubbly, and slightly golden around the edges.
Step 5: Add Toppings and Serve
Remove the casserole from the oven and let it cool slightly. Top with your favorite toppings, such as sour cream, guacamole, diced tomatoes, or fresh cilantro.
