Midnight Chocolate Meringue Pies

INGREDIENTS:
Filling: for TWO pies:
Whisk together 3 cups sugar
1/2 cup flour
8 heaping TBSP Hershey’s Cocoa
Add: (Whisk in)
1 cup Heavy Cream
4 cups whole Milk
4 tsp. Pure Vanilla
8 egg yolks

DIRECTIONS:
*Whisk all ingredients until combined BEFORE putting on the heat.
Then Cook (whisking constantly) on medium high heat until thickened. Remove from heat, and pour filling into TWO deep dish baked pie crusts.
Meringue:
8 egg whites
1/4 cup sugar
1/2 cup corn syrup
*Beat on high speed until stiff peaks form.
Spoon meringue on top of chocolate pies, and bake on 425, just until tops are golden.
Remove from oven and cool on a wire rack for an hour.
Serve Delicious!
