Mozzarella Stuffed Onion Rings with Garlic Butter

Ingredients:

Onion Rings:

2 large onions, cut into thick rings

8 oz mozzarella cheese, cut into strips

1 cup all-purpose flour

2 large eggs, beaten

1½ cups breadcrumbs

1 tsp garlic powder

Salt and black pepper to taste

Oil, for frying

Garlic Butter:

3 tbsp butter

2 garlic cloves, minced

1 tbsp chopped parsley

Instructions:

Separate onion slices into large rings. Match up pairs of similar-sized rings and place a strip of mozzarella between them. Press together gently.

Freeze assembled stuffed rings for 30 minutes to help them hold shape.

Set up a breading station: one bowl with flour, one with beaten eggs, and one with breadcrumbs seasoned with garlic powder, salt, and pepper.

Coat each ring in flour, dip in egg, then coat in breadcrumbs. Repeat egg and breadcrumb steps for extra crunch.

Heat oil to 350°F (175°C) in a deep pan. Fry rings in batches until golden and crispy, about 2–3 minutes. Drain on paper towels.

In a small saucepan, melt butter and sauté garlic until fragrant. Stir in parsley.
