1 ½ cups crushed graham crackers
½ cup unsalted butter, melted
8 oz cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
1 ½ cups heavy whipping cream
2 cups mini rainbow marshmallows
½ cup white chocolate chips (optional)
Directions:
Prepare the Crust:
Mix crushed graham crackers with melted butter until combined.
Press into the bottom of a lined 8×8-inch baking dish. Chill for 10 minutes.
Make the Filling:
In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
In a separate bowl, whip the heavy cream to stiff peaks.
Gently fold the whipped cream into the cream cheese mixture.
Assemble the Slice:
Fold in mini marshmallows and white chocolate chips (if using).
Spread the mixture evenly over the crust.
Sprinkle extra mini marshmallows on top for decoration.
Chill and Serve:
Refrigerate for at least 4 hours, or until firm.
Slice into squares and enjoy!
