Ingredients:
1 cup cornmeal
1 cup all-purpose flour
¼ cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup milk
2 large eggs
¼ cup unsalted butter, melted (plus extra for greasing the pan)

Preheat your oven to 400°F (200°C). Grease an 8-inch square baking pan or cast-iron skillet with butter.

In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.

In a separate bowl, whisk the milk, eggs, and melted butter until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined—don’t overmix or the cornbread will be dense.

Pour the batter into the prepared pan and spread evenly.

Bake for 20–25 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Let cool for 10 minutes before slicing.

This Northern-style cornbread is light, moist, and slightly sweet—perfect with a bowl of chili, soup, or as a side for fried chicken and greens.
