One Pan Sausage, Green Beans, and Potatoes

Ingredients:

1 lb baby potatoes, sliced in half or quarters

8 oz green beans, washed and trimmed

1 small yellow onion, cut into wedges or sliced (about 1 cup)

1 lb pre-cooked andouille sausage or kielbasa, cut into 1-inch slices on the bias

¼ cup olive oil

1 teaspoon garlic powder

1 teaspoon salt

1 teaspoon Italian seasoning blend

½ teaspoon ground black pepper

Directions:

Preheat oven:

Preheat oven to 400°F (200°C).

Lightly grease a large sheet pan or line it with parchment paper.

Prepare vegetables and sausage:

Place sliced potatoes, green beans, and onion wedges in a large mixing bowl.

Add sausage slices to the bowl.

Season:

Drizzle olive oil over the mixture.

Sprinkle with garlic powder, salt, Italian seasoning, and black pepper.

Toss everything until well coated.

Arrange on sheet pan:

Spread the mixture evenly on the prepared sheet pan in a single layer for even cooking.

Bake:

Bake for 30–35 minutes, stirring halfway through, until potatoes are tender and sausage is browned.

Serve:

Remove from oven and serve hot.

Optionally garnish with fresh parsley or a sprinkle of Parmesan cheese.
