Instructions:

  1. Preheat Oven:

Preheat your oven to 200°C (400°F).

  1. Marinate Chicken:

– In a bowl, mix olive oil, minced garlic, lemon juice, lemon zest, oregano, paprika, black pepper, and salt.

– Coat the chicken pieces thoroughly in the marinade. Cover and marinate for at least 30 minutes (or overnight in the fridge for deeper flavor).

  1. Prepare Potatoes:

– Toss the potato wedges in olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.

  1. Bake:

– Arrange the marinated chicken on one side of a large baking tray and the potato wedges on the other side.

– Drizzle some of the remaining chicken marinade over the potatoes for added flavor.

– Bake in the preheated oven for 35-45 minutes, flipping the chicken and potatoes halfway through. The chicken should be golden and cooked through (internal temperature of 75°C/165°F), and the potatoes should be crispy and tender.

  1. Add Honey Glaze:

– In the last 5 minutes of baking, brush the chicken with honey for a glossy finish.

  1. Serve:

– Garnish the chicken and potatoes with freshly chopped parsley or cilantro.

– Serve with lemon slices for extra zest.

Enjoy your delicious, lemony roasted chicken and potatoes!
