1 pound shrimp, peeled and deveined
4 cups fresh spinach
3 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Juice of 1 lemon
Red pepper flakes (optional)

Directions
1. Heat the olive oil in a large skillet over medium heat.
2. Toss in the minced garlic and let it sizzle until it’s fragrant, about 1 minute.
3. Add your shrimp to the pan and season it with salt, pepper, and a pinch of red pepper flakes if you like a little heat.
4. Let the shrimp cook, stirring now and then, until they’re pink and just cooked through—this should take about 3 to 4 minutes.
5. Add the fresh spinach to the skillet and gently stir it in with the shrimp. Cook just until it wilts, about 2 minutes.
6. Finish everything off with a generous squeeze of lemon juice over the top, then serve right away while it’s all warm and tempting.
