Slow cooked lamb trotters recipe

Ingredients:

4 lamb or goat trotters (cleaned and cut)

1 onion, chopped

2–3 cloves of garlic, minced

2 tablespoons olive oil

1 teaspoon salt (or to taste)

1 teaspoon black pepper

1 teaspoon paprika

½ teaspoon ground ginger

½ teaspoon turmeric

1 bay leaf

1 small chili pepper (optional)

Water (enough to cover)

Instructions:

Clean the trotters very well and rinse them several times.

In a pot, heat the olive oil over medium heat.

Add the onion and garlic, sauté until soft.

Add the trotters and all the spices. Mix well.

Add water until the trotters are fully covered.

Add the bay leaf and chili pepper (if using).

Cover the pot and let it simmer on low heat for 2 to 3 hours, until the meat is very tender and the sauce thickens.

Check water level from time to time and adjust seasoning if needed.

Serve hot.

Serving tip:

Usually served hot, sometimes with bread or plain rice.
