3 lbs boneless, skinless chicken breasts (about 5-6 pieces)
1 1/2 cups BBQ sauce (e.g., Sweet Baby Ray’s Honey BBQ)
1/2 medium onion, grated (with juice)
1 tbsp olive oil
1 tbsp Worcestershire sauce
2 tbsp brown sugar
Instructions:
In a 5-6 qt slow cooker, mix together the BBQ sauce, grated onion, olive oil, Worcestershire sauce, and brown sugar.
Add chicken breasts to the sauce, turning to coat them evenly.
Cover and cook on high for 2-3 hours or on low for 6-7 hours, until the chicken reaches an internal temperature of 165°F and is easy to shred. Adjust time if using smaller pieces, a smaller batch, or a hotter slow cooker.
Remove chicken to a cutting board and shred with two forks.
Return shredded chicken to the slow cooker and stir to coat with the sauce.
