This Slow Cooker Creamy Italian Chicken is rich, tangy, and unbelievably easy to make with just four simple ingredients. Tender chicken cooks low and slow in Italian dressing, then gets finished with cream cheese and Parmesan for a creamy, comforting dinner the whole family loves.
Ingredients
2 pounds boneless, skinless chicken breasts
1 cup bottled Italian dressing (regular or zesty)
1 (8-ounce) block cream cheese, softened and cubed
½ cup grated Parmesan cheese (plus extra for serving, optional)
Directions
Add Chicken to Slow Cooker
Place the chicken breasts in an even layer in the bottom of a 4–6 quart slow cooker. If the breasts are very thick, slice them in half horizontally for more even cooking.
Add Italian Dressing
Pour the Italian dressing evenly over the chicken, turning the pieces once or twice to coat.
Cook
Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the chicken is fully cooked and very tender.
Shred the Chicken
Use two forks to shred the chicken directly in the slow cooker, or shred on a cutting board and return it to the pot.
Make It Creamy
Add the cubed cream cheese and grated Parmesan to the slow cooker. Stir gently, cover, and cook on LOW for 10–15 minutes, stirring once more until the cheese is fully melted and the sauce is smooth.
Adjust & Serve
Taste and adjust the sauce if needed. Add a splash of Italian dressing for more tang or a little water or milk to loosen the sauce. Serve hot.
