Ingredients:
– 1 cup dried chickpeas (200 grams)
– 1 cup red lentils (200 grams)
– 1 large onion, chopped (200 grams)
– 4 cloves garlic, minced
– 2 tablespoons olive oil
– 1 tablespoon smoked paprika
– 1 tablespoon cumin
– 1 teaspoon coriander
– 1/2 teaspoon chili powder
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– Salt and black pepper to taste
– Vegetable broth or water, as needed
– Natural sausage casings (optional)

Directions:
1. Start by soaking the chickpeas overnight or use the quick soak method: boil the chickpeas for 2 minutes, then let them soak in hot water for an hour. Once they’re ready, drain and rinse them.
2. Cook the chickpeas until they’re tender but not mushy. Drain and set aside.
3. Next, boil the red lentils until they’re soft, then drain and set aside with the chickpeas.
4. In a large pan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until they’re softened and fragrant.
5. Sprinkle in the smoked paprika, cumin, coriander, chili powder, dried thyme, and oregano. Cook for another minute to let those spices come alive.
6. Now, grab your food processor! Combine the cooked chickpeas, cooked lentils, and the sautéed onion mixture. Pulse until you achieve a nice coarse texture.
7. Season your mixture with salt and black pepper to taste.
8. If you’re feeling adventurous, you can stuff the mixture into natural sausage casings. If not, no worries! Just shape the mixture into patties or logs.
9. Cook your sausages by pan-frying, baking, or grilling until they’re beautifully browned and heated through.
