1 cup frozen spinach, thawed and squeezed completely dry
1/2 cup crumbled feta cheese
1/4 cup cream cheese, softened
1 garlic clove, minced
1/4 cup dried cranberries

1 sheet puff pastry, thawed
1 egg, beaten (for egg wash)
1 tbsp sesame seeds (optional, for decoration)

Step-by-Step Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Make the filling:
In a bowl, mix the spinach, feta, cream cheese, garlic, and cranberries.
Season lightly with salt and pepper. Mix until well combined and smooth.
Prepare the pastry:
Roll out the puff pastry on a lightly floured surface.
Use a sharp knife or pizza cutter to slice it into long strips, about 1 inch (2–2.5 cm) wide.
Fill each strip:
Take one pastry strip at a time and place small spoonfuls of the spinach mixture along the center of the strip — like little dots, about every 2 inches.
You don’t need to spread it — just place small bits of filling at intervals.
Shape into trees:
Start at the bottom and fold the strip back and forth in a zigzag, making each “fold” a bit shorter than the one before.
It should look like a tiered triangle, wide at the bottom and narrow at the top — just like a Christmas tree.
Gently pinch or press the layers together in the center so they hold their shape.
Place the shaped tree upright on the baking tray.
Egg wash and decorate:
Brush each tree with the beaten egg to give a golden shine.
Sprinkle sesame seeds on top for a snowy festive touch.
Bake:
Bake for 18–22 minutes until the trees are puffed and golden brown.
Cool and serve:
Let them cool slightly on the tray before serving.
Serve warm or at room temperature. Garnish with fresh rosemary sprigs for a festive presentation.
