Strawberry Fluff Salad

Ingredients:
  • 1 (3 ounce) box strawberry Jell-O mix
  • * 1 cup hot water
  • * 1/2 cup cold water
  • * 1 (3.4 ounce) box instant vanilla pudding mix
  • * 1 (8 ounce) container whipped topping, thawed (like Cool Whip)
  • * 1 (15 ounce) can crushed pineapple, well drained (optional, but highly recommended for extra zing!)
  • * 1 cup fresh strawberries, hulled and sliced (plus more for garnish, if desired)
  • * 1/2 cup mini marshmallows (optional, for extra fluffiness!)

Instructions:
  • In a large bowl, dissolve the strawberry Jell-O mix in 1 cup of hot water. Stir until completely dissolved, about 2 minutes.
  • 2. Stir in the 1/2 cup of cold water.
  • 3. Add the instant vanilla pudding mix to the Jell-O mixture and whisk for 2-3 minutes, until slightly thickened.
  • 4. Gently fold in the thawed whipped topping until no streaks remain.
  • 5. If using, fold in the well-drained crushed pineapple and mini marshmallows.
  • 6. Finally, carefully fold in the sliced fresh strawberries.
  • 7. Transfer the fluff salad to a serving bowl, cover, and refrigerate for at least 2 hours (or preferably overnight) for the best flavor and texture.
  • 8. Garnish with extra fresh strawberries just before serving, if desired.
