Stuffed Artichokes

Ingredients:
3 large Artichokes
1 1/2 cups grated Pecorino Romano Cheese
1 cup breadcrumbs
1/3 cup chopped parsley
2 tbsp of garlic
1/2 tbsp salt
1/2 tbsp black pepper
1/2 cup olive oil

Instructions:
Cut 1/3 of the top off of the artichoke and the stem. Trim off the pointy ends of the leaves and scoop out the center.
Place artichokes is cold water with the juice of 1-2 lemons.
In another bowl mix cheese, breadcrumbs, parsley, garlic, salt, pepper and olive oil. Mix together and stuff artichokes with the mixture.
In a large pot add 2 cups of water, add artichokes, cover with a lid and simmer on low heat for 40-45 minutes.
Cool for 20 minutes before eating. Dipping in butter is optional because the stuffing has so much flavor already.
