INGREDIENTS:

– 2 cups broccoli florets
– 1 cup sliced carrots
– 1 cup diced bell peppers
– 1 cup chopped zucchini
– 1 can of chickpeas, drained
– 1 cup shredded cheese
– 1/2 cup vegetable broth
– 2 cloves of minced garlic
– Salt, pepper, and your favorite herbs

INSTRUCTIONS:
1. Preheat the oven to 375°F (190°C).
2. In a baking dish, mix all the vegetables and chickpeas.
3. In a separate bowl, combine vegetable broth, garlic, salt, pepper, and herbs.
4. Pour the broth mixture over the vegetables and toss to coat.
5. Cover the dish with foil and bake for 30-40 minutes.
6. Remove the foil, sprinkle cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
