Ingredients:

* 6 large eggs

* 1/2 cup milk

* 1 cup mixed vegetables (such as chopped bell peppers, onions, spinach, mushrooms)

* 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)

* Salt and pepper to taste

Instructions:

1. Preheat your oven to 375°F (190°C). Grease or spray a 12-cup muffin tin.

2. In a bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.

3. In a separate bowl, combine the mixed vegetables and shredded cheese.

4. Fill each muffin cup about 1/3 full with the vegetable and cheese mixture.

5. Pour the egg mixture over the vegetables, filling each cup about 3/4 full.

6. Bake for 20-25 minutes, or until the eggs are set and the tops are golden brown.

7. Let the muffins cool in the tin for a few minutes before serving.
