Prepare the Dish: Generously butter a 9×13-inch baking dish. Arrange slices of French bread in a single layer, slightly overlapping if needed.
Mix Custard: In a large bowl, whisk together eggs, half-and-half, milk, vanilla extract, 2/3 cup of sugar, cinnamon, and nutmeg until well blended.
Soak Bread: Pour the egg mixture evenly over the bread slices, ensuring each piece is soaked. Cover with plastic wrap and refrigerate overnight.
Bake: The next morning, preheat oven to 350°F (175°C). Remove plastic wrap from the dish. Dot the top of the bread with pieces of butter and sprinkle a little sugar on top.
Cook: Bake for 35-40 minutes, until the toast is puffed and golden.
Caramelize the Top: Remove from the oven and allow it to cool briefly. Sprinkle additional sugar on top, then broil briefly until the sugar caramelizes.
Serve: Serve warm with maple syrup and enjoy!
