1 pound lobster tails, meat removed and cut into bite-sized pieces
4 tablespoons unsalted butter
3 cloves garlic, minced
1 tablespoon lemon juice
Β½ teaspoon paprika

– For the Saffron Mashed Potatoes:

2 pounds Yukon Gold potatoes, peeled and chopped
Β½ cup heavy cream
4 tablespoons unsalted butter
ΒΌ teaspoon saffron threads
Salt and pepper, to taste

1. Prepare the Saffron Mashed Potatoes:

Place the peeled and chopped potatoes in a large pot of cold water with a pinch of salt.
Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
While the potatoes cook, warm the heavy cream in a small saucepan over low heat and add the saffron threads to steep for 10 minutes.
Drain the potatoes and mash them with butter and the saffron-infused cream.
Season with salt and pepper to taste. Keep warm.
2. Cook the Lobster Bites:

In a skillet over medium heat, melt the butter.
