INSTRUCTIONS:
1. Prepare the Saffron Mashed Potatoes:
Place the peeled and chopped potatoes in a large pot of cold water with a pinch of salt.
Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
While the potatoes cook, warm the heavy cream in a small saucepan over low heat and add the saffron threads to steep for 10 minutes.
Drain the potatoes and mash them with butter and the saffron-infused cream.
Season with salt and pepper to taste. Keep warm.
2. Cook the Lobster Bites:
In a skillet over medium heat, melt the butter.
Add the minced garlic and sautΓ© until fragrant, about 1 minute.
Add the lobster pieces and cook, stirring occasionally, for 3-4 minutes, or until the lobster is opaque.
Stir in the lemon juice and paprika, then season with salt and pepper to taste.
3. Serve:
Plate the saffron mashed potatoes and top with the garlic butter lobster bites.
Garnish with chopped fresh parsley and serve immediately.
