    • Grate the zucchini, sprinkle with salt, and set aside for a few minutes to draw out excess moisture.

    • Grate the potatoes and carrots.
  3. Remove Excess Moisture:
    • Squeeze out the grated potatoes and zucchini to remove as much water as possible to prevent soggy patties.
  4. Mix Ingredients:
    • In a large bowl, combine the zucchini, potatoes, onion, carrots, and parsley.
    • Add cheese to taste, then crack in the eggs and mix thoroughly.
    • Season with salt and pepper.
    • Add 4-6 tablespoons of breadcrumbs to bind the mixture.
  5. Form and Cook the Patties:
    • Heat oil in a skillet over medium heat.
    • Form the mixture into small patties and fry in the skillet for 8-10 minutes on each side or until golden brown and cooked through.
