Cream Cheese Frosting:
- 8 oz cream cheese, at room temperature
- 5 tbsp butter, at room temperature
- 1 tbsp thick whipping cream
- 1 tsp vanilla extract
- 1 cup powdered sugar, sifted
Instructions
- Preheat oven to 350°F. Spray a large 13×9-inch baking pan with oil.
- In a large bowl, sift together flour, baking soda, salt, and cinnamon.
- In a separate bowl, beat eggs, sugar, oil, and vanilla until creamy. Gradually mix in the flour mixture.
- Fold in pineapple (with juice), half of the chopped nuts, and coconut flakes until combined.
- Pour batter into prepared pan and bake for 50–60 minutes. Test for doneness by inserting a toothpick into the center—it should come out clean.
- For the frosting, beat cream cheese, butter, whipping cream, vanilla, and powdered sugar until smooth.
- Once the cake is completely cooled, spread frosting evenly on top and sprinkle with remaining chopped nuts. Refrigerate for at least 1 hour to set the glaze before serving.
