Garlic Parmesan Pork Chops with Cheesy Scalloped Potatoes



INGREDIENTS


For the pork chops:

4 bone-in pork chops
2 tbsp olive oil
3 garlic cloves, minced
1/4 cup grated Parmesan cheese
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
Fresh parsley (for garnish)
For the scalloped potatoes:

4 large potatoes, thinly sliced
2 tbsp butter
2 tbsp all-purpose flour
1 1/2 cups milk
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 garlic cloves, minced
Salt and pepper to taste
Fresh parsley (for garnish)

DIRECTIONS


Prepare the pork chops: Preheat the oven to 400°F (200°C). Rub the pork chops with olive oil, garlic, Parmesan, salt, pepper, and thyme. Heat a skillet over medium-high heat and sear the chops for 2-3 minutes per side until browned. Transfer to the oven and bake for 10-15 minutes until the internal temperature reaches 145°F (63°C).
Make the scalloped potatoes: While the pork chops are baking, melt butter in a saucepan over medium heat. Stir in garlic and flour, cooking for 1 minute. Gradually whisk in the milk and cook until thickened (about 3-4 minutes). Remove from heat and stir in cheddar and Parmesan cheese until melted.
Assemble and bake: In a greased baking dish, layer half of the potato slices. Pour half of the cheese sauce over the potatoes, then repeat with the remaining potatoes and sauce. Cover with foil and bake alongside the pork chops for 30-35 minutes, removing the foil during the last 10 minutes to allow the top to brown.
Serve: Garnish both the pork chops and potatoes with fresh parsley and serve together for a delicious, comforting meal.
