STEP TWO – Dice the green onions and set aside.

STEP THREE – Pierce the potatoes several times with a fork. Brush them with olive oil, then sprinkle evenly with salt.

STEP FOUR – Arrange the potatoes on the prepared baking sheet and bake for 1 hour, or until fork tender.

STEP FIVE – Remove the potatoes from the oven and let them cool for 5–10 minutes, or until they’re cool enough to handle. Slice each potato in half lengthwise and place them cut-side down on the baking sheet. Broil for 2–4 minutes, or until the cut sides are lightly crisp.
